 The main guides to this section of the North Sea Route are the Bikeline Guides.
Number 2 - Germany: Ems to Hamburg.
Number 3 - Germany: Hamburg to Sylt.
The guides include 1:75,000 maps of the route (including variants), route descriptions, tips and details of accommodation. As far as I am aware 'Number 2' & 'Number 3' are only available in German, but the maps are very good and easy to follow, more details can be found on the publishers website.
In order to do some of the variants or visit some of the Fresian islands you may have to use these ferry companies.

The ferry jetty at Emden is on the east side of the Aussen Hafen The ferry jetty at Delfzijl is at the NW corner of the Handelshafen. The ferry jetty at Ditzum is at west side of the canal the north side of the sea wall.
The ferry in the summer of 2003 ran from 1/5/2003 to 30/9/2003 on Wednesdays, Fridays and Sundays.

There are about a dozen sailings a day to Føhr and Amrum. If you are going to Amrum, your return ticket will allow you to catch the ferry to Føhr, have a look around and then catch a later ferry on to Amrum.
